As you likely know by now, my most favorite kind of summer cooking is a simply grilled something surrounded by a bounty of farm-fresh, creative salads. (It always reminds me of my old magazine boss, Carrie, whose fashion philosophy was โ€œGap clothes, Prada accessories.โ€) This is probably why I love Susan Spungenโ€™s new bookย Veg Forwardย so much. You might know Spungen, one of the original Martha Stewart alums, from her legendary annual holiday cookie round-ups. Or you might know her from her newsletterย Susanality, a dependable source of inspiration for baking and grilling and โ€” especially โ€” vegetable-forward cooking. As she writes in her intro: โ€œThe veggies in this book are driving the bus, theyโ€™re not just along for the ride. Every idea for every recipe puts the vegetables first. They are never just tacked on as an afterthought.โ€ Exhibit A: Grilled Savoy Cabbage Wedges with Thai-inspired Dressing, shown above, which I made on Sunday night. Holy moly was that a bold, interesting Prada-esque vegetable dish. And so simple! We served it with a grilled salmon, and I loved the fact that most of my psychic energy was directed towards vegetables instead of the main. Next time, Iโ€™ll serve the recipe alongside some baked tofu or seven-minute eggs, which would definitely earn it a spot in the Weeknight Dinner Hall of Fame.

Anyway, Iโ€™m working my way through the rest of the book, which is organized by season, and at a certain point I just stopped dog-earing pages, because everything just looked so up my alley.ย Veg Forwardย is available everywhere books are sold. Here is the recipe:

Grilled Savoy Cabbage Wedges with Spicy Thai-inspired Dressing
From Susan: Cabbageย makesย aย briefย visitย toย aย hotย grill,ย whereย itย takesย onย aย slightlyย smokyย flavorย andย someย crunch.ย Iย serveย it withย aย steakย knifeย andย fork.ย Savoy cabbageย hasย aย softerย textureย and milder flavor than ordinary cabbage. Donโ€™tย beย afraidย toย useย theย amountย ofย fishย sauceย calledย forโ€”itโ€™sย essentialย to theย well-balancedย dressing. UPDATE from Jenny: If you donโ€™t have access to a grill or if you want to replicate the flavors in a slaw, you can also shred the cabbage (uncooked), then toss with the dressing and the toppings. But do not change a single thing about that dressing, it is perfect.

For the Dressing:
1ย tablespoonย limeย juice
1ย tablespoonย lightย brownย sugar
2ย tablespoonsย riceย wineย vinegarย 
1ย tablespoonย fishย sauceย orย Yondu
1ย tablespoonย chiliย garlicย sauceย orย sriracha, plus more to taste
2ย tablespoonsย vegetableย oilย Freshly ground pepper

For the cabbage
1ย headย Savoyย cabbageย (1ย 1/2ย toย 2ย pounds)ย 
1ย 1/2ย tablespoons vegetable oil
Kosherย salt
1ย cupย looselyย packedย mintย leavesย 
Big handful cilantro sprigs
2ย scallions,ย thinly sliced
1/4ย cupย saltedย peanuts,ย lightlyย crushed

Toย makeย theย dressing:ย Blendย theย limeย juice,ย brownย sugar,ย vinegar,ย fishย sauce,ย and chiliย garlicย sauceย orย srirachaย inย aย smallย bowlย withย aย fork.ย Blendย inย theย oilย and pepper and set aside.

Toย grillย theย cabbage:ย Trimย anyย wiltedย orย tornย outerย leaves.ย Trimย theย bottomย ofย the stemย toย removeย theย brownย portion,ย butย leaveย theย stemย andย coreย intactย soย the wedges hold together on the grill.

Cutย theย headย inย half,ย washย well,ย andย patย dry.ย Thenย cutย eachย halfย intoย 4ย wedges, for a total of 8 wedges.ย Spreadย outย onย aย bakingย sheetย andย coatย onย allย sidesย withย theย oil,then sprinkle lightly with salt.

Heatย aย gasย orย charcoalย grillย toย medium-high.ย Grillย theย cabbageย wedgesย forย 2ย toย 3ย minutes on each side until lightly charred on the edges and surfaces.

Arrangeย theย cabbageย wedgesย onย aย platterย andย drizzleย withย theย dressing. Roughly chop most of the mint,ย reservingย aย handfulย ofย wholeย leavesย forย garnish.ย Topย withย theย mint and cilantro and sprinkle with the scallions and peanuts.

We served the cabbage with the simplest grilled salmon filetโ€ฆ

And for dessert, Abby grilled up some pineapple ringsโ€ฆ

โ€ฆwhich we topped with leftover mint from the vegetables, and grated Sicilian dark chocolate.
