As excited as I was by the arrival of myย Smitten Kitchen Cookbook, I immediately handed it over to Abby. โPick what looks good,โ I told her. The book was written by Deb Perelman, grande dame of food bloggers, Olympian baker, DALS honorary guest, and shutterbug extraordinaire. This last part of her bio was crucial for me. If Iโve learned anything from this whole cooking-for-kids thing, itโs that the easiest way to convince someone under four feet tall that something is delicious is to show them a photograph of that something looking delicious. And when there are pages and pages of photographs showing things like Tomato Shortcakes with Whipped Goat Cheese and Balsamic and Beer-braised Short Ribs with Parsnip Puree and Apple Cider Caramels? Well, I know Iโve hit the jackpot. Almost an hour after giving Abby the book โ an hour filled with ohmygodMOMs and wows โย she handed it back to me the way you see above. It shouldnโt have come as too much of a surprise that the pages she tagged were Gooey Cinnamon Squares and Chocolate Raspberry Rugelach and Peach Dumplings With Bourbon and Hard Sauce and Deepest Dish Apple Pie. Perelmanโs famous for her baked goods, each one of which just feels definitive โ either the only one youโll ever need or the only one that actually exists in the world (Buttered Popcorn Cookies!). Her recipes are not always easy, but they deliver in a big showstopping way, which is why sheโs my go-to for holiday entertaining. As she says in the introduction,ย ย โI donโt really care if a meal is going to take more than thirty minutes to cook or if Iโll have to chop three different vegetables. All I need to know is that a soup that may take a little longer and may be a little more involved will actually taste better than what Iโm used to.โ
Of all recipes tagged with Abbyโs post-its, naturally, I honed in on what looks the most manageable for a weeknight dinner. Itโs pork, itโs apples, and you know itโs going to be good. Deb was nice enough to let us run it below.
PS: Iโm giving away one free copy ofย The Smitten Kitchen Cookbookย to a commenter selected at random. Winner announced Thursday morning (and must live in the 48 contiguous states). Good luck!
Update: Megan (#26) is the lucky winner. Thanks everyone and look out for some more giveaways as we head into the holidays.
Pork Chops with Cider, Horseradish, and Dill
Fromย The Smitten Kitchen Cookbook, by Deb Perelman
Serves 2 to 4ย
glaze
1/2 cup (120 ml) cider vinegar
1/2 cup (120 ml) hard or pressed apple cider
2 tablespoons (30 grams) freshly grated horseradish
1/2 teaspoon salt
pinch of cayenne pepper
chops
4 bone-in loin pork chops, 1/2 inch thick (1 1/2 pounds/680 grams total), room temperature
salt and freshly ground black pepper
1 tablespoon olive oil
1 tablespoon chopped fresh dill
Whisk the glaze ingredients together in a small dish, and set aside.
Trim any excess fat around chops until it is but a thin ribbon, no more than 1/8 inch thick. Pat chops dry with a paper towel, and generously season with salt and pepper. Heat oil in a heavy 12-inch skillet over medium-high heat until the oil starts to smoke. Add the pork chops to the skillet, and cook them until they are well browned, about 3 minutes. Turn the chops, and cook 1 minute longer; then transfer chops to a plate and pour off any fat in skillet.
Pour glaze mixture into the emptied skillet. Bring it to a simmer, and cook until mixture thickens enough so your spatula leaves a trail when scraped across the pan, about 2 to 4 minutes. Return the chops and any accumulated juices from their plate to skillet; turn to coat both sides with glaze. Cook them over medium heat in the glaze until the center of the chops registers 140ยฐF on an instant-read thermometer, about 5 minutes. Adjust seasonings to taste. Transfer the chops to a serving platter and pour the glaze from the pan over them. Sprinkle with dill, and eat immediately.

I always forget how quick pork chops are to cook until I cook them and wonder why I donโt do it more often. Would love to have the SK cookbook!
I have been drooling at her photos for over a year now! I would love this book!
My two go-to websites when Iโm out of dinner ideas are yours and Smitten Kitchen!
Iโve picked up a few new cookbooks this year(including DALS, of course!) and Smitten Kitchen would be a great addition to my collection.
The pork chops look deliciousโฆ and I think the horseradish, cider, and dill sounds like an interesting and wonderful combination! Would love to try this recipe, and anything else in the book!
this is the first thing we made in our house from her book! canโt wait to make everything else!!!
Love Smitten Kitchen! Debโs recipes always earn rave reviews when used.
I <3 smitten kitchen!
I love the Smitten Kitchen blog and canโt wait to read her cookbook!!
I would love a copy of Smitten Kitchen! Iโm almost done with your book, and I love it!! Iโve already made several things, and they were a big hit!
I am a huge Smitten Kitchen fan. I have made tons and tons from her blog.
Having no power and then heat for almost a week in the aftermath of the storm we spent tons of time at the bookstore keeping warm and killing time. I got to look through the book at length. I have the book on my wish list. I have been dying to try the popcorn cookies.
Thanks for the chance.
How lovely! x
Yum, those sound delish. DALS vinegar-y pork chops have made it into our rotation so I will give these a try, too.
i already have a copy but would love an extra to give away for xmas!
Iโve already put so many cookbooks on my Christmas wish list this year, Iโm going to buy this one for my mom. She will do it proud. I canโt wait to see it in person!
This book is on my Christmas list! Love her website.
I love Debโs blog so much โ Iโd love to win her book!
All my cookbooks look like that when I first bring them home!
I would love smitten kitchenโs new book! I did get Sam Siftonโs Thanksgiving at your suggestion and love it dearly. Thank you.
What a great ideaโcanโt wait to give Debโs cookbook to my kids to choose from!
Love DALS. Love Smitten Kitchen. Thanks for the give away opportunity.
Smitten Kitchen was my first ever food blog โ and because of Deb Iโve found so many more glorious resources!
The cookbook looks beautiful!
Looking good, indeed! Would love to have this book, I know it would energize a long winter of cooking for my family.
I would love this cookbook and youโve inspired me to hand a cookbook to my son and do the same thing that youโve done with your daughter! This is one benefit of a hard copy book that browsing recipes on the web canโt do quite as well. He could leave a browser window open for me, but I donโt think it has the same effect as a post-it on a physical page in a book.
