It is So On

The best thing we eat this summerย will take us three minutes to minutesย to make. It willย involve only fiveย ingredients, a serrated knife,ย and not a singleย charcoal briquette.ย Iโ€™m talking about theย tomato sandwich.ย Not the bacon-lettuce-and-tomatoย sandwich; not theย grilled-cheese-and-tomatoย sandwich; not the tomato-mozzarella-and-basil sandwich: theย tomato sandwich.ย Period. It is a thingย of simple, summery, kid-friendly beauty:ย After enduringย ten depressingย months of the color-enhancedย Styrofoam junk thatย passes for tomatoes at the Stop โ€˜N Shop,ย itโ€™s like, from out ofย nowhere, the wind suddenly kicks upย and the dark cloudsย partโ€ฆand thankย you Jesus, blue skyย punches through.ย Tomatoes! Real tomatoes! Flavor!ย Texture! Sweetness! Over the course ofย the next eight weeksย or so โ€” betweenย now and, say, mid-September, whenย tomatoes are atย their meaty, juicy peak and the heirloomย bin at the farmersโ€™ย market is positivelyย en fuego โ€” weโ€™ll inhaleย as many of these as we can. Last weekend, we ate them ย for lunch on Friday and Saturday, then as a quick dinner after a long day of driving on Sunday. And we ate them greedily, too, as thoughย the supply was finiteย and they were aboutย to run outโ€”which,ย actually, they are. So we scarf what we can (always stopping to ask the kids as we devour them, โ€œHow good is this?โ€) and then sufferย through the gray,ย mealy, tastelessย months aheadโ€ฆuntil we can do it all again. โ€“ Andy

The Tomato Sandwich

-Countryย white bread
-Hellmannโ€™s mayonnaise (yes, Hellmannโ€™s; no other mayo will do)
-Tomatoes ofย various colors andย varieties, sliced
-Sea salt and pepper

Take a few slicesย of a heartyย white bread. (We like something with a littleย gravitas to it. Weย use something called,ย appropriately enough,ย Canadian White, whichย is available at T.ย Joeโ€™s.) Toast them. Lightly coat eachย slice with mayo,ย butโ€”this is crucialโ€”be sure to do this while the toastย is still warm. You wantย the mayo to get melty,ย you want to get theย oil going, but you donโ€™t want to mess withย the awesomenessย of the fruit. Now: arrange two or threeย slices of tomato on topย of the toast. Let the kids pick the colors, mixing red, yellow andย green, heirloomย and non, Jersey andย beefsteak, whatever. Sprinkle generously with salt and aย couple of grinds ofย pepper. Some peopleย also add some freshย basil here, but whyย risk destabilizingย the atom? Why messย with perfection?

    Glad to find you via the NYTimes. Looking forward to reading backwards through your archives. My parents always made open-faced tomato sandwiches in the broiler with homemade bread, bacon, pickles, cheddar, and onion. Ah, summer!

    There is something intrinsically wrong with buying tomatoes in July.

    tomato sandwiches are my fave summer food EVER, but here in the south, dukeโ€™s mayo is the only way to go!

    The best tomato I had last summer was an heirloom served with homemade mayo. Absolutely delightful. Iโ€™m willing to wait until summer for the fruit. Itโ€™s amazing how delicious a fresh, ripe tomato can be!

    Ay yes, the tomato season. It has sprung down south as well and we enjoyed some in 3 out of the last 4 meals. Also good-sprouts on the sandwich.

    Belle, you totally nailed me! Youโ€™re right. Dukeโ€™s is fantastic (I grew up south of the Mason Dixon line) and I thought about including it, but failed. Iโ€™m sorry. Every bit as good as Hellmannโ€™s.

    About ten minutes before I read this I felt my mind switch from berry mode to corn-and-tomato mode. Switch is now cemented. Thanks to Andy Iโ€™ll probably buy 1200 tomatoes at the farmerโ€™s market tomorrow.

    This is the perfect summer sandwich! I live in the UK, but grew up eating either New Jersey State tomatoes or Erie County (New York) tomatoes and this was my favourite way to eat them. People here think Iโ€™m crazy and that the sandwich sounds disgusting. I tell them not to knock it until they try itโ€ฆ

    When the hubs and I got married I would buy two brands of mayo as I was not about to give up my Hellmans. A couple of months in he admitted I no longer had to buy his childhood brand as hellmans is the best.

    Best Summer quick food and so (Yummy)! I have to eat 2. Another good idea is Bread(1)slice/tomato/cheese put in oven bake (warm) about 10 mins. Yum

    Have it Latvian way โ€“ white bread, butter (the real stuff), tomato, dill, sliced onion (optional for onion haters), salt and pepper.

    Tomato sandwiches are THE best but the mayo can only be Dukeโ€™s. My mom sends it to me in Montana all the way from SC!

    oh yes! the summer tomato sandwich surpasses all other meals everbut you are missing one important step. you need to peel the tomato! just use the knife and take it off. trust me.. it changes everything.

    Sorry yโ€™all, but if you want to do the tomato sandwich right, you need to use Dukeโ€™s, not Hellmannโ€™s. Just so you know! ;-P

    Love tomato sandwiches only this time of year. But as for the mayo โ€“ it has to be Dukes which has no sugar, unlike BF or Hellmans. Why they put sugar in, I can only guess. Would you put it in your home made mayonnaise? I think not.
