I was thinking of adding a new category on the right over there called โ€œMeals That Are Impossible To Photograph Because My Daughter Canโ€™t Help But Eat The Subject.โ€ Because donโ€™t you think itโ€™s saying something about the deliciousness of a meal when I have to instruct my poor, hungry, 8-year-old model โ€œStop eating your dinner!โ€ as she mauls whatโ€™s in front of her โ€” in this case a fried fish sandwich with sweet potato chips โ€” before I even have the chance to finish shooting it? She just couldnโ€™t help herself. So I never got to capture a close-up, which means youโ€™ll have to trust me that this crispy flounder sandwich has potential to convert even the staunchest fish-anthrope. My kids like them with tartar sauce, but donโ€™t be afraid to use ketchup if you think it might increase your chances of success.

Pan-Fried Fish Sandwiches
We made these with flounder, but it works with other mild white fish like sole, tilapia, or hake.

Set up dredging station for fish: one plate ofย flour, one plate of one whiskedย egg, one plate ofย bread crumbs(preferably panko or Kelloggs Corn Flake crumbs) seasoned with salt and pepper. Addย olive oil to a skillet thatโ€™s been set over medium-high heat. Dredgeย fish filets (about ยพ pound that have been trimmed with a knife or kitchen scissors to sandwich-size pieces) first in flour, then in egg, then in bread crumbs. Fry about 2 minutes a side until crust is crispy and fish is cooked through. Serve onย whole wheat buns withย tartarsauce (or ketchup) and sweet potato fries (I love Trader Joeโ€™s frozen brand) or sweet potato chips (recipe below).

Sweet Potato Chips
Your best bet is to select sweet potatoes that are more tubular than oval shaped. It makes it much easier to slice them into rounds.

Slice 3ย sweet potatoes into thin chip-like pieces. (A mandoline would work here.) In a bowl, toss the potatoes withย olive oil, salt, pepper, and a littleย curry powder if youโ€™re feeling ambitious. Spread on a cookie sheet and bake for 15 minutes at 450ยฐF watching them carefully after 10 to make sure they donโ€™t burn. Once they are brown and crispy, remove from oven and drain on paper towel before serving.

    We call fish โ€œchickenโ€ and my daughter eats it. I am sure that is bad โ€“ but she always liked it until she got old enough to understand what a fish wasโ€ฆ.

    I havenโ€™t yet tried to make sweet potato chips (theyโ€™re so yummy & cheap at Trader Joeโ€™s!)
    But I just harvested a whole bunch, so I guess I have no more excuses ๐Ÿ™‚

    I ned to make some sweet potato chips. thatโ€™s a great idea. Normally my son wonโ€™t touch sweet potatoes, not even sweet potato fries but he will never refuse chips!

    Sometimes it is like you can read my mind. This weekend wasw a bad fastfood fest every meal. After my kids had eaten 5 meals that were McDonalds I was sick with my parenting skills. The last straw was when my hubby called today to see if we could have Long John Silvers for dinner. Long John Silvers? After that weekendโ€ฆUh, no. But we can have this!     I canโ€™t wait to try the sweet potato chipsโ€“my kids are awful about eating sweet potatoes or squash. Maybe Iโ€™ll mix in some regular potatoes, too. Funny enough, we had fish sandwiches for Sunday lunch with leftover breaded fish filets from Saturdayโ€™s dinner. 7-yr-old likes fish, so was happy to eat it with ranch dressing in a sandwich. The other two ate soybutter & jelly, as usual.

    I made sweet potato french fries from potatoes I got at the farmer market. I cut them into wedges added some olive oil and baked them for about a half hour. So easy!

    I made sweet potato chips over the weekend and was reminded how unbelievably yummy they are. This time we ate them with two dipping sauces: fresh pesto and some homemade chipotle mayonnaise Iโ€™d made for my husbandโ€ฆOMG good!

    Also, a fine justification for that mandoline Iโ€™ve been wanting!

    We made the fish sandwiches tonight and they were EXCELLENT! We used rock cod and fried the fish in half olive/half grapeseed oil because we were low on olive oil. We will be eating these regularly. Thank you!

    sorry to keep posting about these sandwiches, but tonight, I turned the left over fish into a poor manโ€™s fish tacos with whatever I had in the fridge โ€“ warmed up fish and tortillas, broke fish into pieces, put fish into tortillas, topped fish with a squeeze of lime, shredded cheese, thin strips of radicchio (I didnโ€™t have any cabbage) and a concoction of mayo, plain yogurt, chipotle tabasco, and tapatio.
